- Preheat oven to 350°F (175°C). Grease and flour an 8-inch square or 9-inch round pan, or line with parchment paper.
- Peel, core, and chop apples into ¼–½ inch pieces. Toss with lemon juice if desired.
- Whisk melted butter, sugar, and eggs until smooth. Stir in vanilla or lemon juice.
- Sprinkle flour, baking powder, cinnamon, and salt over wet mixture. Fold gently until combined.
- Fold in chopped apples until evenly distributed.
- Pour batter into prepared pan and spread evenly. Tap to release air bubbles.
- Bake 35–40 minutes, until golden and a toothpick comes out with a few moist crumbs.
- Cool 15–20 minutes before slicing. Dust with powdered sugar before serving.
