Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 1 pound ground sausage (mild, hot, or maple)
  • 2 cups shredded Monterey Jack cheese
  • 4 large eggs
  • 1.5 cups milk
  • 1 teaspoon dry mustard
  • 0.25 teaspoon hot sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

  1. Brown the sausage in a skillet, breaking it into crumbles. Drain well.
  2. Place the unbaked crust in a pie plate and press gently into place.
  3. Spread the cooked sausage evenly over the bottom of the crust.
  4. Sprinkle shredded Monterey Jack cheese over the sausage.
  5. Whisk eggs, milk, dry mustard, hot sauce, salt, and pepper until smooth.
  6. Pour the custard mixture evenly over the sausage and cheese.
  7. Bake at 375°F for 40–45 minutes or until the center is set and the top is lightly golden.
