- Whisk flour, salt, and sugar in a mixing bowl. Cut in cold butter until it resembles coarse crumbs.
- Add ice water gradually until the dough clumps. Divide into two discs, wrap, and chill 30 minutes.
- Toss apple slices with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and flour until coated.
- Roll one disc into a rectangle and fit into a sheet pan. Spread apples evenly and dot with butter.
- Roll out the second disc and place over the apples. Seal edges, crimp, and cut slits for steam.
- Brush with egg wash, sprinkle with sugar, and bake at 375°F for 40–45 minutes until golden and bubbling.
- Cool 30 minutes before slicing to help the filling set.
