A fragrant, hearty stir-fry made with tender beef, warm spices, vegetables, and feta for a rich Mediterranean meal.

Ingredients
  

  • 450 g ground beef (80/20)
  • 4 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 red onion, chopped
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 small zucchini, diced and patted dry
  • 1 cup cherry tomatoes, halved
  • 1 tsp oregano, ground
  • 1 tsp coriander, ground
  • 1/2 tsp cinnamon, ground
  • 1 tsp cumin, ground
  • 1/2 tsp allspice, ground
  • 1/2 tsp clove, ground
  • 75 g sheep’s milk feta, crumbled
  • 425 g fire-roasted diced tomatoes
  • 425 g chickpeas, drained but not rinsed
  • 240 ml tomato sauce
  • 1 tsp mastiha resin
  • Salt and pepper to taste
  • Green onions and parsley, for garnish

Method
 

  1. Heat olive oil and bloom oregano, coriander, cinnamon, cumin, allspice, and clove for 1 minute. Remove from heat and cool.
  2. Heat oil and sauté onion and garlic for 2–3 minutes. Add peppers, zucchini, and tomatoes; cook 4–5 minutes. Drain all liquid.
  3. Brown beef in a hot skillet, drain most fat, add spice blend, salt, and pepper. Stir in chickpeas, tomato sauce, tomatoes, and mastiha; simmer 2–3 minutes.
  4. Serve hot with feta, parsley, and green onions over warm pita.
