- Heat olive oil and bloom oregano, coriander, cinnamon, cumin, allspice, and clove for 1 minute. Remove from heat and cool.
- Heat oil and sauté onion and garlic for 2–3 minutes. Add peppers, zucchini, and tomatoes; cook 4–5 minutes. Drain all liquid.
- Brown beef in a hot skillet, drain most fat, add spice blend, salt, and pepper. Stir in chickpeas, tomato sauce, tomatoes, and mastiha; simmer 2–3 minutes.
- Serve hot with feta, parsley, and green onions over warm pita.
