Ingredients
  

  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs, room temperature
  • 1/2 cup ketchup, reduced
  • 2 tbsp Worcestershire sauce, reduced
  • 1 tsp salt
  • 32 oz frozen tater tots
  • 2 cups cheddar cheese, shredded
  • 1 tbsp cornstarch
  • Chives, for garnish
  • Hot honey, optional

Method
 

  1. Simmer ketchup and Worcestershire for 3 minutes until thickened. Combine beef, breadcrumbs, onion, garlic, eggs, salt, and reduced mixture. Mix gently and chill 5 minutes.
  2. Microwave tater tots for 3 minutes, pat dry, and toss with cornstarch.
  3. Press meat mixture into baking dish, top with tater tots, and dust lightly with more cornstarch.
  4. Bake at 375°F for 45 minutes until meat reaches 160°F and tots are crisp. Add cheese and bake 15 minutes more. Rest 10 minutes before slicing.
  5. Serve warm with chives and hot honey if desired.
