Ingredients
  

  • 1.5 lb beef stew meat or chuck roast, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 3 medium carrots, sliced
  • 6 cups beef broth
  • 1 can diced tomatoes
  • 2 leaves bay leaves
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 2 medium potatoes, cubed
  • 1 cup green beans, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • large pot or Dutch oven
  • wooden spoon
  • cutting board

Method
 

  1. Brown beef in olive oil until seared on all sides.
  2. Add onion, garlic, celery, and carrots and sauté until softened.
  3. Add beef broth, tomatoes, herbs, and bay leaves. Bring to a boil.
  4. Reduce heat and simmer until beef is tender.
  5. Add potatoes and green beans and simmer until vegetables are tender.
  6. Season to taste and remove bay leaves before serving.
