Ingredients
  

  • 1 bag frozen hashbrowns, thawed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup chicken stock
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Method
 

  1. Preheat oven to 350°F and grease a 9×13-inch casserole dish.
  2. Sauté onion in olive oil until golden, then add garlic until fragrant.
  3. Stir in flour, then gradually add chicken stock and milk until thickened.
  4. Add sour cream, cheese, salt, pepper, and parsley and stir until smooth.
  5. Combine sauce with hashbrowns and spread evenly in the dish.
  6. Bake until bubbly and golden on top.
