Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded cheddar cheese, divided

Method
 

  1. Preheat oven to 375°F and steam or boil cauliflower until just tender.
  2. Melt butter, stir in flour, and cook briefly to form a roux.
  3. Whisk in milk and cook until thickened.
  4. Season sauce and stir in 1 1/2 cups cheese until smooth.
  5. Place cauliflower in baking dish, pour sauce over, and top with remaining cheese.
  6. Bake uncovered until bubbly and lightly golden.
