Ingredients
  

  • 450 g ground chicken thighs
  • 40 g panko breadcrumbs
  • 35 g red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp dried Greek oregano
  • 1 lemon lemon zest and juice
  • 1 large egg, room temperature
  • salt and pepper
  • 1 tbsp olive oil
  • 250 g full-fat Greek yogurt
  • 0.5 Persian cucumber, grated and squeezed dry
  • 1 clove garlic, minced (for tzatziki)
  • 1 tbsp lemon juice (for tzatziki)
  • 1 tbsp fresh dill, chopped (for tzatziki)
  • 1 tbsp olive oil (for tzatziki)

Method
 

  1. Grate the cucumber and squeeze it completely dry using paper towels.
  2. Combine chicken, breadcrumbs, onion, garlic, herbs, lemon zest and juice, egg, salt, and pepper. Mix gently.
  3. Rest the mixture for 10 minutes, then shape into 1-inch meatballs.
  4. Heat olive oil in a skillet and sear meatballs until golden and cooked through.
  5. Mix all tzatziki ingredients in a bowl and chill before serving.

Notes

Cucumber must be squeezed completely dry for a thick tzatziki. Do not overmix the meat.
