- Slice potatoes and soak in cold salted water for 20 minutes. Agitate and drain, then pat dry.
- Toss dried potatoes with olive oil, garlic, smoked paprika, and cornstarch.
- Preheat air fryer. Arrange potatoes in a single layer and air-fry at 400°F for 10 minutes.
- Flip and rotate basket. Cook an additional 6 minutes until golden and crisp.
- Rest for 1 minute in basket. Sprinkle with parmesan and parsley. Optional: red pepper flakes.
- Serve immediately as a snack or side dish.
