- Soak diced jalapeños in ice water for 5 minutes, then pat dry.
- Mix cream cheese with cornstarch. Fold in cheddar, jalapeños, and bacon bits. Chill 3 minutes.
- Lay wrapper diagonally, add 2 tbsp filling, fold bottom corner, tuck tightly, roll seam-side down, brush edges with ice water, chill 2 minutes.
- Heat oil to 350°F. Fry 3 rolls at a time for 4 minutes, flipping halfway, until golden brown.
- Transfer to wire rack to cool 2 minutes. Garnish with extra cheddar, flaky salt, or serve with sriracha mayo.
