Ingredients
  

  • 1 box carrot cake mix
  • 1 cup grated carrots
  • 2 tbsp powdered sugar for towel dusting
  • 8 oz cream cheese, room temp
  • 5 tbsp butter, room temp
  • 2 cups powdered sugar, sifted and chilled
  • 1 tsp vanilla extract
  • extra powdered sugar for dusting
  • pecan pieces, toasted
  • cinnamon for garnish

Method
 

  1. Mix cake mix according to box instructions. Fold in grated carrots until evenly combined.
  2. Line pan with parchment and spray lightly. Dust a clean towel with powdered sugar and chill briefly.
  3. Pour batter into prepared pan, smooth top, and bake at 350°F for 15 minutes. Immediately invert onto sugared towel.
  4. Peel parchment, trim edges, fold towel over short ends, and roll cake from short end, seam-side down. Chill 45 minutes.
  5. Beat cream cheese and butter until fluffy. Mix in powdered sugar and vanilla extract.
  6. Unroll chilled cake, spread frosting evenly, re-roll seam-side down, dust with powdered sugar, and chill 30 minutes.

Notes
