Ingredients
  

  • 3 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1 cup cold butter, cubed
  • 2 large eggs, ice-cold
  • 5-6 tbsp ice water
  • 8 cups apples, ¼” slices
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla bean paste
  • flaky sea salt

Method
 

  1. Mix flour, sugar, salt. Cut in cold butter until pea-sized crumbs. Add eggs + ice water, form dough, chill 30 mins.
  2. Roll crust, press into pan, prick, blind-bake 8 mins with weights, cool 5 mins, brush with egg wash.
  3. Toss apple slices with lemon juice, sugars, cornstarch, and cinnamon. Drizzle melted butter, chill 5 mins.
  4. Add filling to crust, dust with cornstarch, top with second crust, cut slits, egg wash, bake 35–40 mins at 375°F. Rest 20 mins, glaze, cool 10 mins.
