Ingredients
  

  • 4 pieces boneless chicken breasts
  • 1 cup mayonnaise
  • ½ cup Parmesan, finely grated
  • 1 tsp minced garlic
  • 1 tsp garlic powder
  • 1 tbsp cornstarch
  • extra Parmesan, shaved
  • paprika for color
  • fresh parsley, chopped

Method
 

  1. Pat chicken dry, pound to ¾-inch thickness. Rub with cornstarch and ½ tsp salt. Rest 15 mins at room temp.
  2. Whisk mayonnaise, Parmesan, garlic. Brush melted butter in baking dish. Press crust mixture on top of chicken, sprinkle extra Parmesan.
  3. Bake at 375°F for 30 mins. Broil 2–3 mins until crust is golden-bubbly. Rest 10 mins before serving.

Notes

Allow chicken to rest at room temp, use cornstarch moisture lock, broil for golden crust.
