- Pat chicken dry, pound to ¾-inch thickness. Rub with cornstarch and ½ tsp salt. Rest 15 mins at room temp.
- Whisk mayonnaise, Parmesan, garlic. Brush melted butter in baking dish. Press crust mixture on top of chicken, sprinkle extra Parmesan.
- Bake at 375°F for 30 mins. Broil 2–3 mins until crust is golden-bubbly. Rest 10 mins before serving.
