Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup chopped pecans
  • 1 cup unsalted butter, melted
  • 1 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup blended whole kernel corn (optional)

Method
 

  1. Preheat oven to 325°F (165°C) and grease a 9x13-inch baking pan or line with parchment.
  2. In a large bowl, whisk flour, baking soda, salt, and chopped pecans.
  3. In another bowl, whisk melted butter, honey, eggs, and vanilla until smooth.
  4. Fold wet ingredients into dry mixture until just combined. Add blended corn if using.
  5. Pour batter into pan and bake 50–55 minutes until golden brown and a toothpick comes out clean.
  6. Cool for 15–20 minutes before slicing and serving warm.
