Ingredients
  

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • to taste salt and freshly ground black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, for garnish
  • 1 clove minced garlic (optional)
  • 0.5 teaspoon Italian seasoning or red pepper flakes (optional)

Method
 

  1. Wash zucchini, trim ends, slice into 1/4-inch rounds, season with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Pan-fry zucchini 2-3 minutes per side until golden.
  3. Reduce heat to low. Sprinkle mozzarella and Parmesan over zucchini, cover, and cook 1-2 minutes until cheese melts.
  4. Transfer to a platter, garnish with parsley, and serve immediately.
