Ingredients
  

  • 1.5 lbs Italian sausage (sweet, hot, or mixed)
  • 3 bell peppers, sliced
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • salt, to taste
  • black pepper, to taste
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 cup chicken broth or crushed tomatoes (optional)

Method
 

  1. Heat olive oil in a skillet and brown sausage on all sides. Remove and slice.
  2. Cook onions and peppers in the same skillet until softened and lightly caramelized.
  3. Add garlic, oregano, basil, salt, pepper, and red pepper flakes.
  4. Return sausage to skillet, add broth or tomatoes if using, and simmer until heated through.
