Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 1 cup heavy cream
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup shredded white cheddar
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 2 tbsp butter

  • 9x13 baking dish
  • Steamer or pot with steaming basket

Method
 

  1. Preheat oven to 375°F and grease a 9x13 baking dish.
  2. Steam cauliflower 5–7 minutes until just tender. Drain well.
  3. Whisk heavy cream, eggs, salt, pepper, and garlic powder.
  4. Stir in cheddar and mozzarella.
  5. Spread cauliflower in dish and pour custard mixture over.
  6. Dot with butter and sprinkle Parmesan on top.
  7. Bake 30–35 minutes until golden and bubbling.
  8. Rest 10 minutes before serving.

Notes

Drain steamed cauliflower well to help the custard set perfectly.
