Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup unsalted butter
  • 3/4 cup brown sugar, packed
  • 1/2 cup peanut butter (optional)
  • 1 tsp vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup chopped nuts or shredded coconut (optional)

Method
 

  1. Line a baking dish with parchment paper.
  2. Melt butter and brown sugar in a saucepan over medium heat until smooth.
  3. Remove from heat and stir in vanilla and peanut butter if using.
  4. Mix in oats and optional nuts or coconut until well combined.
  5. Press two-thirds of the oat mixture firmly into the prepared pan.
  6. Melt chocolate chips and spread evenly over the oat base.
  7. Sprinkle remaining oat mixture on top and press gently.
  8. Refrigerate for at least 2 hours until set, then slice and serve.
