- Season beef lightly with salt and pepper.
- Heat oil and 1 tablespoon butter in a skillet. Sear beef in batches until browned, then remove.
- Add remaining butter, cook onions until soft, then add garlic and mushrooms.
- Sprinkle flour over vegetables and stir. Slowly add beef broth, stirring until thickened.
- Stir in mustard and Worcestershire sauce. Return beef to the pan.
- Remove from heat and gently stir in sour cream. Adjust seasoning and serve.
