Ingredients
  

  • 1 lb sirloin steak, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 3/4 cup sour cream
  • salt and black pepper to taste

Method
 

  1. Season beef lightly with salt and pepper.
  2. Heat oil and 1 tablespoon butter in a skillet. Sear beef in batches until browned, then remove.
  3. Add remaining butter, cook onions until soft, then add garlic and mushrooms.
  4. Sprinkle flour over vegetables and stir. Slowly add beef broth, stirring until thickened.
  5. Stir in mustard and Worcestershire sauce. Return beef to the pan.
  6. Remove from heat and gently stir in sour cream. Adjust seasoning and serve.

Notes

Add sour cream off heat to prevent curdling. Serve immediately for best texture.
