Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • salt, to taste
  • black pepper, to taste

Method
 

  1. Preheat oven to 375°F and grease a baking dish. Cook cauliflower until just tender.
  2. Melt butter in a saucepan. Stir in flour and cook briefly.
  3. Whisk in milk and cook until thickened. Season with garlic powder, paprika, salt, and pepper.
  4. Stir in most of the cheese until melted and smooth.
  5. Combine cauliflower with sauce in baking dish. Top with remaining cheese.
  6. Bake 25–30 minutes until bubbly and golden. Rest briefly before serving.

Notes

Drain cauliflower well to avoid excess moisture. Add breadcrumbs for a crunchy topping.
