Ingredients
  

  • 4 boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 2 cups butter crackers, crushed
  • 1/4 cup butter, melted

Method
 

  1. Preheat oven to 375°F and grease a baking dish.
  2. Season chicken with salt and pepper. Cook in olive oil until lightly browned and cooked through.
  3. Sauté onion, garlic, bell pepper, and mushrooms until softened.
  4. Mix soup, broth, sour cream, and cheese. Stir in chicken, vegetables, peas, and corn.
  5. Transfer mixture to baking dish. Combine crackers with melted butter and sprinkle on top.
  6. Bake 35–40 minutes until bubbly and golden. Rest briefly before serving.
