A simple cast-iron method for cooking a perfectly seared, juicy ribeye steak.

Ingredients
  

  • 1 ribeye steak (1–1½ inches thick)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme or rosemary

Equipment

  • cast-iron skillet
  • Tongs
  • cutting board
  • Chef's knife

Method
 

  1. Pat steak dry and season with salt and pepper.
  2. Heat cast-iron skillet over high heat.
  3. Sear steak 2–3 minutes per side.
  4. Add butter, garlic, and thyme; baste steak.
  5. Rest steak 5–7 minutes.
  6. Slice against the grain and serve.
