- Line a baking sheet with parchment paper and set aside.
- Melt butter in a heavy saucepan over medium heat. Add sugar and salt, stirring constantly.
- Cook, stirring, until mixture reaches a deep golden color and hard crack stage.
- Remove from heat and carefully stir in vanilla extract.
- Pour toffee onto prepared baking sheet and spread evenly.
- Sprinkle chocolate over hot toffee. Let soften, then spread evenly.
- Top with nuts if desired and let cool completely before breaking into pieces.
