Ingredients
  

  • 1 box yellow cake mix (15.25 oz)
  • 3 large eggs
  • 1/3 cup vegetable or canola oil
  • 1 cup water
  • 11 oz mandarin oranges, drained
  • 3.4 oz instant vanilla pudding mix
  • 20 oz crushed pineapple with juice
  • 16 oz frozen whipped topping, thawed
  • 11 oz mandarin oranges, for garnish

Method
 

  1. Preheat oven to 350°F and grease a baking dish.
  2. Prepare cake batter according to package directions.
  3. Gently fold drained mandarin oranges into the batter.
  4. Pour batter into dish and bake until set. Cool completely.
  5. Mix pudding mix with crushed pineapple and juice until thick.
  6. Fold whipped topping into pineapple mixture.
  7. Spread topping over cooled cake, garnish with oranges, and refrigerate.
