Ingredients
  

  • 3 lbs red potatoes, cubed
  • 1/2 cup sliced salad olives with minced pimentos
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup mayonnaise
  • 4 tablespoons yellow mustard
  • salt and black pepper to taste
  • 5 large hard-boiled eggs, chopped

Method
 

  1. Boil cubed potatoes in salted water until fork-tender. Drain and cool slightly.
  2. Chop hard-boiled eggs and set aside.
  3. In a large bowl, mix mayonnaise, mustard, onion powder, garlic powder, salt, and pepper.
  4. Gently fold in potatoes, eggs, and olives until well combined.
  5. Cover and refrigerate at least 1 hour before serving.
