  • 6 cups granulated sugar, divided
  • 2 cups heavy cream
  • 1/2 cup unsalted butter
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans or walnuts

Method
 

  1. Combine sugar, heavy cream, and butter in a heavy saucepan over medium heat.
  2. Cook, stirring frequently, until mixture reaches soft-ball stage.
  3. Remove from heat and carefully stir in baking soda and vanilla.
  4. Stir in chopped nuts until evenly distributed.
  5. Drop spoonfuls onto parchment or wax paper and allow to cool completely.
