Ingredients
  

  • 2 pounds ground beef
  • 1 envelope French onion soup mix
  • 1 cup crushed butter crackers or breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 medium onion, finely diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 cup shredded Gruyère or Swiss cheese
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce

Method
 

  1. Mix ground beef, soup mix, crackers, eggs, milk, diced onion, and seasonings.
  2. Shape into a loaf and place in crockpot using foil sling.
  3. Cook on low until meatloaf is tender and fully cooked.
  4. Sauté sliced onions in butter until caramelized. Add broth and Worcestershire.
  5. Spoon onion mixture over meatloaf and add cheese if desired.
