Ingredients
  

  • 1 pound fresh mushrooms, cleaned and trimmed
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 1 cup buttermilk
  • 1.5 cups panko breadcrumbs
  • vegetable oil, for frying
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 0.5 teaspoon garlic powder (for dip)
  • 0.5 teaspoon onion powder (for dip)
  • 1 tablespoon lemon juice or vinegar

Method
 

  1. Clean mushrooms gently and cut larger ones into bite-sized pieces.
  2. Set up breading station with seasoned flour, egg and buttermilk mixture, and panko breadcrumbs.
  3. Coat mushrooms in flour, dip in egg mixture, then roll in panko breadcrumbs.
  4. Heat oil and fry mushrooms in batches until golden and crisp. Drain on paper towels.
  5. Mix sour cream, mayonnaise, herbs, seasonings, and lemon juice to make ranch dip. Chill before serving.
