- Heat oil in a large pot and toast fideo noodles until golden brown. Remove and set aside.
- In the same pot, brown ground beef with onion and garlic until fully cooked.
- Return toasted fideo to the pot and stir to combine.
- Add potatoes, tomato sauce, broth, and seasonings. Stir well.
- Simmer covered until potatoes and noodles are tender. Adjust liquid if needed and serve hot.
