Ingredients
  

  • 1 lb ground beef
  • 1 cup fideo noodles or broken vermicelli
  • 2 medium potatoes, peeled and cubed
  • 0.5 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can tomato sauce (8 oz)
  • 3.5 cups beef broth or water
  • 2 tablespoons oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt

Method
 

  1. Heat oil in a large pot and toast fideo noodles until golden brown. Remove and set aside.
  2. In the same pot, brown ground beef with onion and garlic until fully cooked.
  3. Return toasted fideo to the pot and stir to combine.
  4. Add potatoes, tomato sauce, broth, and seasonings. Stir well.
  5. Simmer covered until potatoes and noodles are tender. Adjust liquid if needed and serve hot.
