Ingredients
  

  • 2 lbs ground beef or beef and pork mix
  • 1 cup shredded carrots
  • 1 cup shredded celery
  • 1 large onion, finely chopped
  • 0.66 cup oatmeal
  • 1 cup Italian-style breadcrumbs
  • 4 large eggs
  • 6 tablespoons ketchup
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 can beef consommé (10.5 oz)
  • 0.33 cup ketchup (for sauce)
  • 1 tablespoon cornstarch
  • 0.5 teaspoon dried basil
  • hot sauce, optional

Equipment

Method
 

  1. Preheat oven and lightly grease a loaf pan or baking dish.
  2. Mix ground meat, vegetables, oats, breadcrumbs, eggs, ketchup, parsley, salt, and pepper until just combined.
  3. Shape mixture into a loaf and place into prepared pan.
  4. Whisk beef consommé, ketchup, cornstarch, basil, and hot sauce in a saucepan and simmer until thickened.
  5. Spoon sauce over meatloaf and bake until fully cooked and glazed. Rest before slicing.
