Ingredients
  

  • 0.25 cup turkey pan drippings and fat
  • 3 tablespoons all-purpose flour
  • 2.5 cups turkey stock or chicken broth
  • salt, to taste
  • black pepper, to taste
  • 0.5 teaspoon poultry seasoning or thyme (optional)
  • 1 tablespoon butter (optional)

Method
 

  1. Transfer turkey drippings to a saucepan and heat over medium heat.
  2. Whisk flour into drippings to form a smooth roux and cook briefly.
  3. Gradually whisk in warm stock until smooth.
  4. Simmer until thickened, whisking often.
  5. Season with salt, pepper, and optional herbs. Adjust consistency as needed.
