Ingredients
  

  • 4 thin-cut chicken breasts
  • 8 slices bacon, divided
  • 1 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup sugar-free BBQ sauce
  • 1 toothpicks for securing

Method
 

  1. Preheat oven to 375°F and line a baking pan with parchment.
  2. Cook 4 slices of bacon in a skillet until crisp; remove and crumble.
  3. Add sliced onions to the same skillet and cook until caramelized.
  4. Combine crumbled bacon and onions in a bowl and let cool slightly.
  5. Lay chicken breasts flat and season evenly with spices.
  6. Spoon bacon-onion mixture onto each chicken breast.
  7. Roll each chicken breast tightly and secure with toothpicks.
  8. Wrap each roll with one slice of the remaining bacon.
  9. Brush each roll with BBQ sauce and place on the prepared pan.
  10. Bake for 25 minutes, then broil for 2–3 minutes to crisp bacon.
  11. Brush lightly with more BBQ sauce before serving.
  12. Let rest for 5 minutes before slicing.
