- Preheat oven to 375°F and line a baking pan with parchment.
- Cook 4 slices of bacon in a skillet until crisp; remove and crumble.
- Add sliced onions to the same skillet and cook until caramelized.
- Combine crumbled bacon and onions in a bowl and let cool slightly.
- Lay chicken breasts flat and season evenly with spices.
- Spoon bacon-onion mixture onto each chicken breast.
- Roll each chicken breast tightly and secure with toothpicks.
- Wrap each roll with one slice of the remaining bacon.
- Brush each roll with BBQ sauce and place on the prepared pan.
- Bake for 25 minutes, then broil for 2–3 minutes to crisp bacon.
- Brush lightly with more BBQ sauce before serving.
- Let rest for 5 minutes before slicing.
