  • 3 large eggs

Equipment

  • Kitchen scale Optional for precise ingredient measurements
  • rubber spatula
  • Wire cooling rack

Notes

Prep time: 5 minutes. Bake time: 35–40 minutes. Total active and baking time: 40–45 minutes, plus cooling. Yield: one small loaf, approximately 8 slices. Use an 8-by-4-inch loaf pan. This bread has a moist, compact texture rather than an airy yeast-bread crumb. Blend oats finely and cool the bread completely before slicing. Internal temperature should reach at least 165°F. Refrigerate in an airtight container for up to 4 days or freeze individual slices for approximately 2 months for best quality. Choose certified gluten-free oats if needed. Nutritional values are approximate and based on nonfat Greek yogurt.
