Ingredients
  

  • 4 large Yukon Gold or Russet potatoes, peeled
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • salt and black pepper, to taste
  • 0.25 cup grated Parmesan cheese (optional)

  • Sharp knife or mandoline
  • Baking dish
  • Pastry brush

Method
 

  1. Preheat oven and grease a baking dish.
  2. Slice potatoes thinly and separate gently.
  3. Arrange potato slices in overlapping rows in the dish.
  4. Brush with butter and oil, then season with garlic, herbs, salt, and pepper.
  5. Cover and bake until tender, then uncover and bake until golden and crisp. Add Parmesan if using.
