- Prepare white cake batter with water, oil, and egg whites.
- Bake cake layers until set. Cool completely.
- Assemble cake with one cake layer, cheesecake layer, and second cake layer.
- Cook evaporated milk, sugar, egg yolks, and butter until thickened.
- Stir in vanilla, coconut, and pecans. Cool slightly.
- Spread frosting over top of cake. Chill before serving.
