  • 16 oz cream cheese, softened
  • 0.5 cup granulated sugar
  • 0.5 tsp vanilla extract
  • 2 large eggs
  • 1 box white cake mix (15.25 oz)
  • 1 cup water
  • 0.5 cup vegetable oil
  • 3 large egg whites
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • 0.5 cup unsalted butter
  • 1 tsp vanilla extract
  • 1.5 cups sweetened shredded coconut
  • 1 cup chopped pecans

Method
 

  1. Beat cream cheese, sugar, and vanilla until smooth. Add eggs and mix gently.
  2. Bake cheesecake layer until set. Cool completely and chill.
  3. Prepare white cake batter with water, oil, and egg whites.
  4. Bake cake layers until set. Cool completely.
  5. Assemble cake with one cake layer, cheesecake layer, and second cake layer.
  6. Cook evaporated milk, sugar, egg yolks, and butter until thickened.
  7. Stir in vanilla, coconut, and pecans. Cool slightly.
  8. Spread frosting over top of cake. Chill before serving.
