Ingredients
  

  • 2 medium zucchinis
  • 0.5 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 0.5 cup Parmesan cheese, freshly grated
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil or cooking spray

Method
 

  1. Preheat oven to 220°C and line a baking sheet with parchment paper.
  2. Cut zucchinis into evenly sized fry-shaped spears and pat dry.
  3. Set up breading station with flour, beaten eggs, and a mixture of breadcrumbs, Parmesan, and seasonings.
  4. Coat zucchini in flour, dip in egg, then press into breadcrumb mixture.
  5. Arrange fries on baking sheet in a single layer and lightly spray or drizzle with oil.
  6. Bake until golden and crisp, flipping halfway through.
  7. Serve immediately with dipping sauce if desired.
