Ingredients
  

  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon (optional)
  • 0.5 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 3 medium ripe bananas, mashed
  • 0.5 cup sour cream or plain yogurt
  • 1 tsp vanilla extract
  • 1 cup walnuts, chopped

Method
 

  1. Preheat oven to 175°C and grease a loaf pan.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in mashed bananas, sour cream, and vanilla.
  4. Whisk flour, baking soda, salt, and cinnamon. Add to wet ingredients and mix gently.
  5. Fold in chopped walnuts.
  6. Pour batter into loaf pan and smooth top.
  7. Bake until golden and a toothpick inserted comes out mostly clean.
  8. Cool before slicing and serving.
