- Preheat oven to 175°C and grease a loaf pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in mashed bananas, sour cream, and vanilla.
- Whisk flour, baking soda, salt, and cinnamon. Add to wet ingredients and mix gently.
- Fold in chopped walnuts.
- Pour batter into loaf pan and smooth top.
- Bake until golden and a toothpick inserted comes out mostly clean.
- Cool before slicing and serving.
