Ingredients
  

  • 2 lbs ground beef
  • 1 cup carrots, finely shredded
  • 1 cup celery, finely shredded
  • 1 large onion, finely chopped
  • 0.66 cup oatmeal
  • 1 cup Italian-style breadcrumbs
  • 4 large eggs
  • 6 tbsp ketchup
  • 2 tbsp fresh parsley, chopped
  • 2 tsp salt
  • 0.5 tsp black pepper
  • 10.5 oz beef consommé
  • 0.33 cup ketchup
  • 1 tbsp cornstarch
  • 0.5 tsp dried basil
  • 1 pinch hot sauce (optional)

Method
 

  1. Preheat oven and prepare a loaf pan or baking dish.
  2. Combine all meatloaf ingredients in a large bowl and mix gently.
  3. Shape mixture into pan evenly without compacting.
  4. Whisk beef consommé, ketchup, cornstarch, basil, and hot sauce in a saucepan.
  5. Heat sauce until thickened, stirring constantly.
  6. Pour sauce evenly over meatloaf.
  7. Bake until fully cooked and internal temperature is safe.
  8. Rest briefly before slicing and serving.
