Ingredients
  

  • 5 medium ripe bananas, peeled and sliced
  • 20 oz crushed pineapple with juice
  • 0.25 cup shredded coconut (optional)
  • 3 cups granulated sugar
  • 3 tbsp lemon juice
  • 1 tsp coconut extract (optional)

Method
 

  1. Mash bananas lightly in a large saucepan.
  2. Add crushed pineapple with juice, sugar, lemon juice, and coconut if using.
  3. Bring mixture to a gentle boil over medium heat, stirring often.
  4. Reduce heat and simmer, stirring frequently, until thickened.
  5. Remove from heat and stir in coconut extract if using.
  6. Cool slightly and transfer to clean jars. Refrigerate once cooled.
