Ingredients
  

  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 tbsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.25 tsp ground nutmeg
  • 2 large eggs, room temperature
  • 1 cup whole milk or buttermilk
  • 0.25 cup unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 2 cups apples, peeled and finely chopped
  • 0.5 cup unsalted butter, melted (for coating)
  • 1 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

Method
 

  1. Preheat oven and line a baking sheet with parchment paper.
  2. Whisk flour, sugar, baking powder, cinnamon, salt, and nutmeg in a bowl.
  3. Mix eggs, milk, melted butter, and vanilla in a separate bowl.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fold in chopped apples evenly.
  6. Scoop batter onto prepared baking sheet.
  7. Bake until set and lightly golden.
  8. Brush warm fritters with melted butter and coat with cinnamon sugar.
