Ingredients
  

  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 leaf bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Heat oil or butter in a large pot and sauté onion, carrots, and celery until softened.
  2. Add garlic and cook until fragrant.
  3. Pour in chicken broth, add thyme and bay leaf, and bring to a gentle simmer.
  4. Stir in shredded chicken and simmer briefly.
  5. Add egg noodles and cook until tender.
  6. Season with salt and pepper, remove bay leaf, and serve warm.
