Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp mixed spice or cinnamon and nutmeg
  • 1 cup butter
  • 1 cup brown sugar
  • 4 large eggs
  • 0.5 cup milk
  • 2 cups mixed dried fruit
  • 0.5 cup chopped nuts (optional)
  • 0.5 cup orange juice or brandy

Method
 

  1. Simmer dried fruit, butter, brown sugar, and liquid until fruit is plump.
  2. Cool slightly, then stir in eggs and milk.
  3. Whisk dry ingredients together and fold into wet mixture.

  5. Bake until golden and a tester comes out clean.
  6. Cool completely before slicing.
