Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 1/2 cups sharp cheddar cheese, finely grated
  • 2 cups all-purpose flour
  • 2 tbsp pickled jalapeños, finely chopped
  • 1 tbsp jalapeño brine
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter until smooth. Mix in cheddar, jalapeños, brine, salt, paprika, and pepper.
  3. Gradually add flour and mix until a soft dough forms.
  4. Shape dough into a log and slice into rounds, or press and cut into shapes.
  5. Arrange on baking sheet and bake 18–22 minutes until lightly golden at edges.
  6. Cool completely before serving or storing.
