Ingredients
  

  • 2 cups cooked chicken, finely chopped
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 cup celery, finely diced
  • 2 tbsp green onion, sliced
  • 1 tbsp fresh parsley or dill, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 mini croissants

Method
 

  1. In a bowl, combine chicken, celery, green onion, and herbs.
  2. Whisk mayonnaise, Dijon, lemon juice, salt, and pepper until smooth.
  3. Fold dressing into chicken mixture until evenly coated.
  4. Slice mini croissants horizontally.
  5. Fill croissants with chicken salad and serve.
