Ingredients
  

  • 2 cups cooked chicken, finely shredded and well drained
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh parsley or thyme, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp oil for frying

Method
 

  1. In a bowl, mix chicken, egg, breadcrumbs, Dijon, herbs, and seasonings.
  2. Form mixture into small patties.
  3. Heat oil in a skillet over medium heat.
  4. Cook fritters 3–4 minutes per side until golden and crisp.
  5. Transfer to paper towels and serve warm.
