Tender chicken breasts rolled with bacon and caramelized onions, wrapped in bacon, and glazed with BBQ sauce.

Ingredients
  

  • 4 thin chicken breasts
  • 8 slices bacon
  • 1 medium onion, sliced
  • 1/2 cup BBQ sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Cook half of the bacon until crisp. Remove and chop. In the same pan, caramelize onions until golden. Stir bacon into onions.
  2. Season chicken breasts lightly. Spoon bacon-onion mixture onto chicken and roll tightly.
  3. Wrap each roll with remaining bacon slices and place seam-side down in a baking dish.
  4. Brush chicken with BBQ sauce and bake at 400°F until bacon is crisp and chicken is cooked through.
