Ingredients
  

  • 12 oz imitation crab, chopped
  • 1/2 cup celery, finely diced
  • 1/2 cup sweet corn
  • 1/3 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 tbsp fresh dill or parsley, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Chop imitation crab into bite-sized pieces and place in a bowl with celery and corn.
  2. In a separate bowl, whisk mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour dressing over crab mixture and fold gently to combine.
  4. Stir in fresh herbs, cover, and chill for at least 20 minutes before serving.
