- Simmer piloncillo, water, cinnamon sticks, and cloves until dissolved into a syrup.
- Arrange toasted bread in a baking dish and pour syrup over to soak.
- Layer raisins, nuts, and cheese over bread.
- Repeat layers and finish with remaining syrup.
- Bake at 350°F until warmed through. Rest before serving.
