Ingredients
  

  • 2 ribeye steaks (1 to 1½ inches thick)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme or rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Pat steaks dry and season generously with salt and pepper.
  2. Heat cast-iron skillet over high heat until very hot. Add olive oil.
  3. Sear steaks without moving until a deep crust forms, then flip.
  4. Reduce heat slightly, add butter, garlic, and herbs, and baste steaks.
  5. Remove steaks and rest several minutes before slicing and serving.
